Challenge 9 of 12: Gunniess Ice Cream
Lately, I’ve been digging Guinness Stout. While having a six-pack in the refrigerator already, I conveniently chose to make a Guinness ice cream flavor just to see what it would taste like. After cooking most of the stout away, the beer flavor didn’t seem to stay strong. Instead, it left the ice cream with a nice chocolate-coffee sweetness to it, which was nice. I also added a few chocolate chips to enhance it a bit.
Ingredients
12 ounces Guinness stout
2 cups heavy cream
2 cups whole milk
1 cup granulated sugar
6 egg yolks
1 tsp vanilla extract
1 hand full dark chocolate chips
Directions
- Set aside 1/3 cup of Guinness stout.
- Boil the remaining Guinness until it reduces by 1/2
- Beat the sugar and egg yolks
- Simmer the milk and pour milk into egg mixture. Mix well.
- Pour the mixture back to sauce pan on low heat until it turns small bubbles form. Do not allow eggs to scramble
- Cool the custard. Add vanilla extract.
- Stir in both reduced and non-reduced Guinness and heavy cream with custard.
- Stir mixture and refrigerate for 4 hours.
- Process and freeze mixture in ice cream maker.
- Add chocolate chips into ice cream maker.

But… how was it?…. want to know how it really turned out (coz I wouldn’t have thought it possible – but hoping that such a thing as Guinness ice cream DOES exist).
